Nutella Biscotti

I've been baking cookies for my family for years. I grew up baking with my mom who is a phenomenal baker! I love passing this tradition of baking on to my children as well. We even package cookies up each year and ship them off as Christmas gifts. I have so much fun baking around the holidays each year, and as our children grow older, they enjoy helping me!

I'm a very picky baker, and love to make everything from scratch. If a recipe doesn't make me drool, it's not good enough. If you're that type of person, then I hope you enjoy this series of cookie recipe sharing. I will be posting a new cookie recipe each week. The recipes I'm choosing are only ones that I've had immense compliments on. I can say that because technically these aren't my recipes, but ones I've learned from cookbooks, magazines, and online.

My husband's side of the family is Italian, so I wanted to find an authentic Italian cookie that I could share with them. His first request was biscotti. I've tried different variations on this cookie, and finally came up with a favorite!

Nutella Biscotti
Did you know that biscotti means "twice baked"??

(Not actual recipe pictured.)

Ingredients:
  • 4 large eggs, divided
  • 1 cup + 2 Tbsp granulated sugar
  • 1 cup Nutella, divided (chocolate hazelnut spread - found near peanut butter)
  • 1 cup unsalted pistachios, shelled*
  • 1/3 cup dried cranberries (optional - I've never used them as our family is not a fan)
  • 2 3/4 cup all-purpose flour
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1/4 cup confectioners sugar
  • 3 Tbsp boiling water
Instructions:
  1. Preheat oven to 350 degrees. In large mixing bowl, whisk together 3 whole eggs, 1 egg yold (reserve extra white in small bowl) and 1 cup sugar until completely blended. Add 3/4 cup Nutella and stir to fully incorporate. Add pistachios and dried cranberries. Fold in flour, salt and baking powder.
  2. Divide dough in half and form into 2 logs (12 x 2 inches each) on parchment- or foil-lined cookie sheet. (I've found parchment paper to work quite nicely!) If needed, moisten hands with water periodically while forming dough to prevent sticking. Brush logs with remaining egg white and sprinkle with 2 tablespoons sugar. Bake for 25 minutes, rotating tray once after 15 minutes to ensure even baking.
  3. Turn oven down to 300 degrees. Remove logs from oven and let cool for 10 minutes. While still warm, cut widthwise on slight diagonal to form 1/2 inch-wide strips. Lay on sides on baking sheet. For crispy biscotti, bake cookies for another 15 to 20 minutes. Cool completely.
  4. In small bowl, whisk together remaining Nutella, 1/4 cup confectioners sugar and 3 tablespoons boiling water until smooth. Lay biscotti on parchment or foil-lined surface and drizzle glaze over cookies with fork or dip 1 end of each cookie in glaze. To harden glaze, dry at room temperature for at least 1 hour. Store in airtight container for up to 2 weeks.

  1. I am a recent coupon gamer and started all this back in August. It can be highly addictive when you start seeing the savings and the bills decreasing.

Some Products are better bought than made...

This is an update to my Money Saving "Make At Home" Products:

I am not at all impressed with the make-at-home dishwasher detergent. I tried washing my dishes with it twice with different amounts and using the vinegar and they turned out immediately with a white soapy film on them. I may use the mixture I've made for laundry detergent when I'm running low, but I've heard that you might find a white film on your washing machine with this as well.

Therefore, I've decided (for myself - feel free to try it as it might work better for you) that I am sticking to buying the pre-made soap for my dishes!

For those of you who may have already tried it, I'm curious what the outcome was?

Money Saving "Make at Home" Products

I love to hear how people stretch their dollars! Recently, I have been in need of a couple of items that I do not have on hand.

For instance, I was in need of brown sugar for a recipe I needed to make for an outing. Unfortunately, I had used up all the brown sugar the day before for another baked good. Fortunately, I remembered a post I had come across online HERE and was able to make my own! No running out to the store for my need of 2 Tbsp of brown sugar. I just so happened to have molasses and granulated sugar in my pantry and the recipe worked wonderfully!

Today, I have the need for dishwasher detergent, and let me tell you, I value the use of my dishwasher! So, although I could hand wash every dish in my sink and on the counters, I'd much rather find a way to make my own dishwasher detergent. Come to find out, it's really quite simple! I found this recipe HERE and will be purchasing the ingredients on my shopping run today. Hopefully, this will become a tried and true way and I won't be buying the expensive detergent any longer.

It's Fun to be Frugal!!

Though you may think it's a hassle to live a frugal lifestyle, I actually think it's fun to be frugal! Granted, there are times when it can be a challenge to stay on a budget, but overall, the results of frugality far outweigh the challenges.

I love to see how God can work through our finances. My husband and I have developed a new way of looking at finances through saving. God has richly blessed our family in more ways than one ever since we took the challenge to live on less. Whether we're saving for that next car, a family vacation, or just want to be able to give more back to the Lord, it's exciting to see how it can add up.

With times changing and more people looking for ways to cut back on costs, it can sometimes become a necessity to live a more frugal lifestyle. Either that, or we go into debt! I choose to be frugal. If you don't look at it as a burden, but rather a challenge, it can be fun to find those great deals (whether it's using coupons or simply cutting out some expenses in our lives).

When we learn to live on less, we tend to not miss the things that we had. Sometimes those "things" are more of a burden. An illustration in the book I'm reading (The Treasure Principle) shows an example of this. The writer says,

"Let's say I get a television for free. Now what? I hook up the antenna or subscribe to a cable service. I buy a new VCR or DVD player. I rent movies. I get surround-sound speakers. I buy a recliner so I can watch my programs in comfort. This all costs money. But it also takes large amounts of time, energy, and attention.
. . . So what's the true cost of my "free" television?"

This week I chose a song that our church is doing on Sunday. It's a new song for me, but I LOVE the lyrics and I look forward to singing it! I hope it speaks to your heart today.


Pumpkin Pie Seeds

Have you picked your pumpkin yet?!
We had a great time picking just the right pumpkins at our local pumpkin patch yesterday. It's funny how each of our kids picked one that almost matched their personality. Of course they all wanted the biggest ones they could find, but I had to remind them that we are on a budget. I had planned no more than $20 for 3 pumpkins and it ended up being $17.00.

Frugally minded as I am nowadays, I went online to find a good recipe for the yummy pumpkin seeds we'll be snacking on next week. Here's one I think I'll try out this year!

Pumpkin Pie Seeds
Recipe #35620 at Recipezaar.com
  • 1 cup pumpkin seeds, rinsed and dried
  • 1/2 tsp pumpkin pie spice
  • 1/4 tsp salt
  • 6 tsp sugar
  • 1 Tbsp vegetable oil
  1. Spread the pumpkin seeds in a single layer on a large baking sheet and roast them in a 250 degree oven for 45 minutes or until the seeds are completely dry and lightly browned (large seeds may take longer).
  2. In a large bowl, stir together the pumpkin pie spice, the salt and 2 teaspoons of the sugar and set aside.
  3. Heat the oil in a large non-stisk skillet over medium-high heat.
  4. Add the seeds and the rest of the sugar to the skillet, stirring constantly with a wooden spoon until the sugar melts, about 45 seconds.
  5. Scrape the seeds into the pumpkin pie spice mixture and stir to coat.
  6. Allow the seeds to cool before eating and store in an airtight container.

Another tidbit of information I learned tonight is if you forget a coupon at home (and let's stay honest about this), you can bring your receipt back to Publix for a refund of the coupon that applies to your receipt. Walgreens Coupon Policy

After speaking with a very friendly customer relations representative at Walgreens, here is what I've learned about
Walgreens Coupon Policy:
  • Walgreens will accept a Manufacturer coupon with a Walgreens Store coupon on each individual item.
  • If item(s) produce a Register Reward (coupon printed out of machine), that Register Reward cannot be used toward the purchase of the same item(s) and receive another Register Reward (no rolling them together).
  • You may not use more coupons than the amount of merchandise purchased and still receive a Register Reward.
This is Walgreen's Corporate Policy, however each store manager may choose to limit quantities of items purchased and coupons used. If you have a problem with your store's policy, please contact Walgreens at #1-800-925-4733.

There have been rumors going around online that a manufacturer coupon cannot be used with a Register Reward earning item. This is untrue according to Corporate. Please see the 3rd point above for the correct "rules" regarding this rumor.

Walgreens Double Dipping Days are 10/24-10/25

So, what are Walgreens Double Dip Days??

Well, there are typically 2 days of each month where the EasySaver Catalog coupons overlap. That is the catalog from October and the catalog from November (both found on my side bar). These are the "double dip" days. Most Walgreens stores will allow coupons from both catalogs for one item, plus if you add a manufacturer coupon to the mix, there are often excellent deals!

Things to remember when shopping at Walgreens:

  • They accept store coupons in conjunction with manufacturer coupons.
  • Weekly flier coupons ring up multiple times for the amount of items you are purchasing that pertain to that coupon. In other words, there is no need for multiple flier coupons for several purchases of 1 item.
  • Only 1 Register Reward per deal will ring up on each transaction. (i.e. If you plan to get the Dimetapp $10 RR's several times, you'll need to purchase them in different transactions. You will only receive 1 $10 RR per transaction.) However, if you are getting different RR deals in 1 transaction, this will not be a problem, and they will all print out.
  • You may use RR's from one item to purchase the same item again, however you will not receive additional RR's for the 2nd purchase.
  • When using coupons it is usually best to give them to your cashier in this order: RR's, ESQ's, MFR's

CVS Beauty Magazine "Reinventing Beauty"

For some time, I've been seeing posts about the infamous "beauty magazine" at CVS, but never knew where I could find one, what it looked like, and so on. I've asked my CVS cashiers about it, but they never seemed to know what it was either.

Finally, the other day I asked a cashier who knew what it was and where to find it. I couldn't believe that I got the last one! So, if you've been as confused as I was about this CVS beauty magazine, I hope this helps you.

Here's what the current magazine looks like from the front cover:

It's called Reinventing Beauty, costs just $.99, and contains over $30 in CVS and Manufacturer coupons good through 12/31/08. So whenever you see posts that refer to a CVS Beauty Coupon, this is probably where it came from.

It is a typical looking magazine. For some reason, I had the idea that it was more of a pamphlet, but that is not the case. You can find it amongst the other magazines on the rack and I found mine on the small magazine rack by the entrance with the newspapers. I hope this helps anyone who might be new to the CVS coupon game.
